Inspired by recipe found on half baked harvest.
Ingredients (use as a guide, but measure intuitively, sometimes more is needed):
- 2 tablespoons sesame oil
- 2 lbs boneless skinless chicken breasts (cubed)
- 2 tablespoons curry powder
- 3 – 4 tablespoons red curry paste
- 1 tablespoon tomato paste
- 3 tablespoons butter
- 2 tablespoons chopped garlic
- 1 tablespoon chopped fresh ginger (this is where sometimes more is better)
- A heaping bunch of spinach (remember it cooks down A LOT, so you might need more here as well)
- 2 cans of coconut milk (26 ounces total)
- 1/2 cup freshly chopped cilantro
- Keep kosher salt on standby, it will come into play pinch by pinch depending on your taste.
Instructions:
- In a large skillet combine the oil, chicken, curry powder, and a pinch of salt. Set over medium heat then cook for 3 minutes.
- Add curry paste, tomato paste, butter, garlic, and ginger. Cook another 2 minutes.
- At this point I transferred the meat into an enameled dutch oven that had been lightly heated on the stove. You probably could start everything in the larger cooking vessel to save on dirty dishes.
- Add in the coconut milk and then the spinach. Since the spinach cooks down so much you can add a lot (depending on how much you like spinach. The original recipe called for broccoli, but it is not my favorite cooked vegetable so I subbed in something I prefer, you can do the same).
- Season with more salt
- Cook 5-10 more minutes until the chicken is cooked through and the sauce has thickened.
- Once it is almost ready to serve, stir in the cilantro.
NOTES:
- If you find it to be too spicy, a small amount of sour cream can help cut the spicy, or if you have any left over coconut milk, that would help too.
- Delicious served over rice, cauliflower rice, or noodles
- Serves 4 comfortably if served over something
- A squeeze of fresh lime is a great addition to top the meal.
Ideas to Tweak Recipe:
- Use salmon or shrimp instead of chicken
- Use escarole, bok choy, Napa cabbage as an alternate veg
- Add pineapple and peanuts
- Instead of using meat, make it a vegetarian dish and use cubed potatoes.
