Berry Cobbler

I was looking for my mom’s cobbler recipe that I had posted here years ago, and while scanning it over, I discovered not only was it incomplete, it made absolutely no sense. I apologize for anyone who tried to make it before, there was no way it would have worked. Here is the real-tried and true recipe.

Filling Ingredients:

  • 4 cups berries
  • 3/4 cup sugar
  • 2 tablespoons flour
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 2 tablespoons butter

Batter Ingredients:

  • 1 cup unsifted all purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • 2 eggs, slightly beaten
  • Splash of vanilla
  • Dash of cinnamon

Instructions:

  • Make filling:
    • In medium bowl, combine berries, 3/4 cup sugar, 2 tablespoons flour, lemon juice, vanilla, cinnamon, 1/4 teaspoon salt, and 1/4 cup water. 
    • Pour filling into a greased 9×9 baking dish
    • Dot with 2 tablespoons butter
  • Preheat Oven to 375 degrees
  • Make Batter:
    • In medium bowl, combine all batter ingredients
    • Beat with a wooden spoon until smooth
    • Drop in 9 portions over filling space evenly (batter will spread during baking)
  • Bake 35-40 minutes or until berries are tender and crust is golden (around 200 degrees F)

 NOTE: You might notice that the ingredients list above differs from the “original recipe” image below. If found that the batter didn’t cover quite enough of the berries in practice.
